Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 large yellow onion
  • 3 cloves garlic
  • 1 tbsp fresh ginger
  • 1.5 tsp ground cumin
  • 1.5 tsp coriander
  • 1 tsp sweet paprika
  • 0.5 tsp turmeric
  • 0.25 tsp ground cinnamon
  • 15 oz can canned garbanzo beans
  • 2 medium roma tomatoes
  • 2 tbsp tomato paste
  • 2.5 cups herb broth
  • 1 large sweet potato
  • 1 medium zucchini
  • 0.25 cup dried apricots
  • 0.25 cup cilantro
  • 1 tbsp lemon juice
  • 1 tsp coarse salt
  • 0.5 tsp black pepper

Instructions

  1. 1Heat Extra Virgin Olive Oil in a large pot or Dutch oven over medium heat. Sauté Yellow Onion until softened (about 5-7 minutes), then add Garlic, Fresh Ginger, Ground Cumin, Ground Coriander, Sweet Paprika, Ground Turmeric, and Ground Cinnamon; cook for 1 minute until fragrant.
  2. 2Stir in Canned Garbanzo Beans, diced Roma Tomatoes, Tomato Paste, Herb Broth, cubed Sweet Potato, chopped Zucchini, and chopped Dried Apricots. Bring the mixture to a gentle simmer.
  3. 3Cover the pot and cook for 25-30 minutes, or until the Sweet Potato and Zucchini are tender and the flavors have melded together.
  4. 4Remove from heat, stir in Fresh Cilantro and Lemon Juice. Season with Coarse Salt and Black Pepper to taste before serving.
