Ingredients
- 4 fillets cod fillets
- 2 medium bell pepper
- 1 medium white onion
- 2 tablespoons light olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 0.5 teaspoon sea salt
- 0.25 teaspoon coarsely ground pepper
- 4 wedges lime wedges
Instructions
- 1Preheat oven to 400°F (200°C).
- 2Cut bell peppers and white onion into 1-inch pieces.
- 3In a large bowl, toss the bell peppers and white onion with light olive oil, garlic powder, dried thyme, sea salt, and coarsely ground pepper.
- 4Spread the vegetables in a single layer on a baking sheet.
- 5Place the cod fillets on top of the vegetables.
- 6Bake for 20-25 minutes, or until the cod is cooked through and flakes easily with a fork and the vegetables are tender.
- 7Serve immediately with lime wedges.
