Ingredients
- 4 fillets Cod fillets
- 2 medium Bell pepper
- 1 large White onion
- 2 tablespoons Light olive oil
- 1 teaspoon Dried thyme
- 1 teaspoon Garlic powder
- 0.5 teaspoon Sea salt
- 0.25 teaspoon Coarsely ground pepper
Instructions
- 1Preheat oven to 400°F (200°C).
- 2Cut bell peppers and white onion into 1-inch pieces.
- 3In a bowl, toss bell peppers and white onion with light olive oil, dried thyme, garlic powder, sea salt, and coarsely ground pepper.
- 4Spread the vegetables in a single layer on a baking sheet.
- 5Place cod fillets on top of the vegetables.
- 6Bake for 20-25 minutes, or until the cod is cooked through and flakes easily with a fork and the vegetables are tender.
- 7Serve immediately.
