Ingredients

  • 1 lb halibut fillet
  • 0.25 cup brown rice flour
  • 0.25 cup egg substitute
  • 0.25 cup white onion
  • 2 tbsp parsley
  • 1 tbsp fresh chives
  • 1 tbsp extra virgin olive oil
  • 0.5 tsp sea salt
  • 0.25 tsp coarsely ground pepper
  • 0.5 cup coconut cream
  • 1 tbsp garlic-infused oil
  • 1 tbsp fresh basil
  • 1 tsp fresh rosemary
  • 1 tsp thyme
  • 1 pinch salt
  • 1 pinch coarsely ground pepper

Instructions

  1. 1Season halibut fillet with a pinch of sea salt and pepper, then bake or pan-sear until cooked through. Flake the cooled halibut. In a bowl, combine flaked halibut with brown rice flour, egg substitute, minced white onion, chopped fresh parsley, chopped fresh chives, the remaining sea salt, and coarsely ground pepper. Form into 6-8 uniform patties.
  2. 2Preheat oven to 375°F (190°C). Lightly brush a baking sheet with extra virgin olive oil. Place patties on the prepared sheet. Bake for 18-22 minutes, flipping halfway, until golden brown and cooked through.
  3. 3While patties bake, whisk together coconut cream, Garlic-Infused Oil, chopped fresh basil, chopped fresh rosemary, chopped Thyme, a pinch of salt, and a pinch of coarsely ground pepper in a small bowl.
  4. 4Serve the warm baked patties immediately with the fresh herb aioli.
