- 2 fillets halibut fillets
- 1 tbsp extra virgin olive oil
- 0.5 tsp salt
- 0.25 tsp black pepper
- 4 tbsp unsalted butter
- 1 tsp garlic-infused oil
- 2 tbsp lemon juice
- 2 tbsp fresh chives
- 2 tbsp parsley
- 1 tsp fresh thyme leaves
- 0.25 cup white wine
- 0.25 cup fish stock
- 1 cup green beans
- 1 cup cooked quinoa
- 2 wedges lemon wedges
Instructions
- 1Preheat oven to 400°F (200°C). Pat halibut fillets dry, then season with salt, black pepper, and extra virgin olive oil. Place on a baking sheet and bake for 12-15 minutes, or until fish is opaque and flakes easily.
- 2While the halibut bakes, prepare the sauce. In a small saucepan, melt unsalted butter with garlic-infused oil over medium-low heat.
- 3Add lemon juice, white wine, and fish stock to the saucepan, bringing to a gentle simmer. Stir in the finely chopped fresh chives, parsley, and thyme, cooking for 1-2 minutes until fragrant.
- 4Serve the baked halibut immediately, drizzled generously with the warm lemon-herb butter sauce. Accompany with steamed green beans and cooked quinoa, garnished with fresh lemon wedges.
