Ingredients
- 1 lb turkey
- 1 large eggs
- 1 sprig oregano
- 1 sprig basil
- 3 cloves garlic
- 0.5 medium onion
- 2 tbsp olive oil
- 28 oz tomatoes
- 0.5 bell pepper
- 0.5 medium zucchini
- 1 pinch sea salt
- 1 pinch peppers
- 0.25 tsp red pepper flakes
- 1 cup rice
Instructions
- 1Preheat oven to 375°F (190°C). In a large bowl, combine ground turkey, egg, minced garlic, oregano, basil, salt, and pepper. Gently mix until just combined; do not overmix.
- 2Form the mixture into approximately 1-inch meatballs.
- 3Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Brown the meatballs on all sides, then remove from the skillet and set aside.
- 4In the same skillet, sauté diced onion and bell pepper until softened, about 5 minutes. Add crushed tomatoes, zucchini, red pepper flakes (if using), salt, and pepper. Bring to a simmer.
- 5Gently place the browned meatballs back into the sauce. Cover the skillet and transfer to the preheated oven. Bake for 20-25 minutes, or until the meatballs are cooked through.
- 6While the meatballs are baking, cook the white rice according to package directions.
- 7Serve the turkey meatballs and sauce over a bed of fluffy white rice. Garnish with fresh basil, if desired.
