Ingredients
- 2 tablespoons olive oil
- 1.5 kg beef
- 3 large tomatoes
- 4 cloves garlic
- 2 large onion
- 3 pieces chili peppers
- 1 teaspoon cumin
- 0.5 teaspoon clove
- 1 stick cinnamon
- 2 pieces bay leaves
- 2 tablespoons apple cider vinegar
- 6 cups water
- 2 teaspoons salt
- 1 teaspoon black pepper
Instructions
- 1Preheat a large pot over medium heat and add olive oil.
- 2Season the beef with salt and black pepper, then brown in the pot on all sides.
- 3Add chopped onions, minced garlic, and chili peppers to the pot and sauté until softened.
- 4Blend tomatoes, cumin, cloves, cinnamon, and apple cider vinegar into a smooth paste.
- 5Pour the tomato spice blend into the pot with the beef, adding water until the beef is covered.
- 6Add bay leaves, then bring to a boil. Reduce heat to a simmer, cover, and cook for 2.5 hours or until the beef is tender.
- 7Remove the beef from the pot and shred with forks. Return the shredded beef to the pot.
- 8Adjust seasoning with salt and pepper, and simmer for an additional 30 minutes.
- 9Serve the birria with fresh onions, cilantro, and lime on the side for garnishing.
- 10For tacos, dip tortillas in the consommé, fill with shredded beef, and pan-fry until crispy.
- 11Enjoy the birria de res with a side of consommé for dipping the tacos.
