Ingredients

  • 2 cups broccoli
  • 1.5 cups potatoes
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 1 medium onion
  • 4 cups vegetable broth
  • 2 tablespoons nutritional yeast
  • 1 tablespoon lemon juice
  • 0.25 cup parsley
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions

  1. 1Wash and chop the broccoli and potato into small pieces.
  2. 2Heat the olive oil in a large pot over medium heat.
  3. 3Add the minced garlic and chopped onion, sautéing until translucent, about 5 minutes.
  4. 4Add the chopped broccoli and potato to the pot, stirring to combine.
  5. 5Pour in the vegetable broth, bring to a boil, then reduce heat and simmer until the vegetables are tender, about 20 minutes.
