Ingredients

  • 400 grams calamari rings
  • 2 tablespoons olive oil
  • 1 tablespoon lemon zest
  • 2 cloves garlic
  • 100 grams almond flour
  • 2 large eggs
  • 2 tablespoons parsley
  • 3 tablespoons lemon juice
  • 1 teaspoon dijon mustard
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper

Instructions

  1. 1Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
  2. 2In a bowl, mix almond flour, lemon zest, sea salt, and black pepper.
  3. 3In another bowl, whisk the eggs.
  4. 4Dip calamari rings first in the egg, then coat with the almond flour mixture.
  5. 5Place the coated calamari rings on the prepared baking sheet. Drizzle with 1 tablespoon of olive oil.
  6. 6Bake for 20-25 minutes until golden and crispy.
  7. 7For the lemon aioli, combine lemon juice, remaining olive oil, minced garlic, Dijon mustard, and parsley in a blender. Blend until smooth.
  8. 8Season the aioli with salt and pepper to taste.
  9. 9Once calamari is done, let it cool on a wire rack for a few minutes to retain crispiness.
  10. 10Serve the baked calamari with the lemon aioli on the side.
  11. 11Garnish with additional parsley and lemon wedges if desired.
