Ingredients

  • 1 pound shrimp
  • 4 pieces arbol chiles
  • 2 tablespoons chipotle chiles in adobo
  • 2 cups mexican rice
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 2 large tomatoes
  • 1 medium onion
  • 2 tablespoons lime juice
  • 0.25 cup cilantro

Instructions

  1. 1Clean the shrimp and set aside.
  2. 2Hydrate the arbol chiles in hot water for 10 minutes, then remove stems.
  3. 3In a blender, combine hydrated arbol chiles, chipotle chiles, garlic, tomatoes, and onion. Blend until smooth.
  4. 4In a large pan, heat olive oil over medium heat. Add the chile sauce and cook for 5 minutes, stirring occasionally.
  5. 5Add the shrimp to the sauce and cook until they turn pink and are cooked through, about 5-7 minutes.
