Ingredients
- 1 pound shrimp
- 4 pieces arbol chiles
- 2 tablespoons chipotle chiles in adobo
- 2 cups mexican rice
- 2 cloves garlic
- 2 tablespoons olive oil
- 2 large tomatoes
- 1 medium onion
- 2 tablespoons lime juice
- 0.25 cup cilantro
Instructions
- 1Clean the shrimp and set aside.
- 2Hydrate the arbol chiles in hot water for 10 minutes, then remove stems.
- 3In a blender, combine hydrated arbol chiles, chipotle chiles, garlic, tomatoes, and onion. Blend until smooth.
- 4In a large pan, heat olive oil over medium heat. Add the chile sauce and cook for 5 minutes, stirring occasionally.
- 5Add the shrimp to the sauce and cook until they turn pink and are cooked through, about 5-7 minutes.
- 6Prepare the Mexican rice according to package instructions or your preferred method.
