Ingredients
- 1 lb shrimp
- 1 large orange
- 0.5 red bell peppers
- 0.25 scotch bonnet chili
- 2 tbsp fresh basil
- 3 tbsp lime juice
- 3 tbsp extra virgin olive oil
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tbsp grill seasoning
- 1 ripe avocado
- 1 tsp fresh ginger
Instructions
- 1In a medium bowl, gently combine the diced orange, red bell pepper, minced scotch bonnet chili, fresh basil, diced avocado, 1 tbsp lime juice, 1 tsp extra virgin olive oil, grated fresh ginger, and a pinch of salt and black pepper. Set aside to let flavors meld.
- 2In a separate bowl, toss the shrimp with the remaining 2 tbsp extra virgin olive oil, 2 tbsp lime juice, grill seasoning, salt, and black pepper.
- 3Preheat your grill to medium-high heat. Thread the marinated shrimp onto skewers if desired. Grill for 2-3 minutes per side, or until the shrimp are pink and opaque.
- 4Arrange the grilled shrimp on a platter and spoon generous portions of the fresh fruit salsa alongside.
