Ingredients
- 8 ounces grain pasta
- 2 cups cherry tomatoes
- 2 cups spinach
- 2 cloves garlic
- 1 cup ricotta cheese
- 1 cup mozzarella cheese
- 0.5 cup parmigiano reggiano
- 2 tablespoons olive oil
- 0.25 cup basil
- 1 teaspoon oregano
- 0.5 teaspoon red pepper flakes
- 1 large eggs
Instructions
- 1Preheat oven to 375°F (190°C).
- 2Cook whole grain pasta according to package instructions until al dente, drain and set aside.
- 3In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant.
- 4Add cherry tomatoes and cook until they start to soften. Stir in spinach until wilted.
- 5In a mixing bowl, combine ricotta, half of the mozzarella, parmesan, beaten egg, basil, oregano, and red pepper flakes.
- 6Fold the cooked pasta and vegetables into the cheese mixture until well combined.
- 7Transfer the pasta mixture into a baking dish. Sprinkle the remaining mozzarella on top.
- 8Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
- 9Let the pasta bake cool slightly before serving.
- 10Garnish with additional fresh basil before serving.
