Ingredients

  • 2 tbsp olive oil
  • 1 large onion
  • 2 medium carrot
  • 2 medium celery
  • 2 medium garlic
  • 1 pound chicken breast
  • 1 cup brown lentils
  • 14.5 oz tomatoes
  • 6 cups chicken broth
  • 2 cups spinach
  • 1 tbsp lemon juice
  • 0.25 cup parsley
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions

  1. 1Heat the olive oil in a large pot over medium heat.
  2. 2Add the chopped onion, carrots, and celery, sautéing until they start to soften, about 5 minutes.
  3. 3Add minced garlic and cook for another minute until fragrant.
  4. 4Place the chicken breast in the pot, and add the green lentils.
  5. 5Pour in the diced tomatoes and chicken broth, then bring the mixture to a boil.
  6. 6Reduce the heat to a simmer, cover, and cook for 30 minutes, or until the lentils and chicken are cooked through.
  7. 7Remove the chicken from the pot, shred it, and return it to the pot.
  8. 8Add the spinach to the pot and cook until it wilts, about 2 minutes.
  9. 9Stir in the lemon juice, fresh parsley, salt, and black pepper.
  10. 10Taste and adjust the seasoning if necessary.
  11. 11Serve the soup hot, garnished with additional fresh parsley if desired.
