- 1 pound chicken breast
- 2 tablespoons rosemary
- 3 tablespoons lemon juice
- 2 tablespoons olive oil
- 2 cloves garlic
- 0.5 teaspoon sea salt
- 0.25 teaspoon black pepper
- 1 medium red onion
- 1 large zucchini
- 1 large bell pepper
Instructions
- 1Dice the chicken breast into 1-inch cubes and place in a large bowl.
- 2Finely chop the fresh rosemary and mince the garlic cloves.
- 3In a small bowl, whisk together lemon juice, olive oil, rosemary, garlic, sea salt, and black pepper to create the marinade.
- 4Pour the marinade over the chicken cubes, ensuring each piece is well-coated. Cover and refrigerate for at least 20 minutes, or up to 2 hours.
- 5While the chicken is marinating, prepare the vegetables. Cut the red onion, zucchini, and bell pepper into pieces roughly the same size as the chicken cubes.
- 6Preheat the grill to medium-high heat.
- 7Thread the marinated chicken pieces onto skewers, alternating with pieces of red onion, zucchini, and bell pepper.
- 8Grill the skewers for 12-15 minutes, turning occasionally, until the chicken is fully cooked and vegetables are tender.
