Ingredients
- 1.5 lbs chicken breast
- 3 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- 1 tsp lemon juice
- 1 tbsp garlic paste
- 1 tsp garlic paste
- 1 tsp oregano
- 1 tsp salt
- 0.5 tsp salt
- 0.5 tsp black pepper
- 1 tbsp red wine vinegar
- 0.5 tsp dried thyme
- 1 tsp honey
- 1.5 cups non-fat greek yogurt
- 1 cup cucumber
- 2 tbsp fresh mint
- 4 pieces wheat flatbread
- 0.5 small red onion
- 2 tbsp parsley
Instructions
- 1Combine chicken cubes with 3 tbsp olive oil, 2 tbsp lemon juice, 1 tbsp garlic paste, oregano, 1 tsp salt, black pepper, red wine vinegar, thyme, and honey. Marinate for at least 30 minutes, then thread chicken onto skewers.
- 2For the tzatziki, mix Greek yogurt, grated cucumber, mint, 1 tsp garlic paste, 1 tsp lemon juice, and 0.5 tsp salt. Chill until serving.
- 3Grill or pan-fry chicken skewers over medium-high heat for 8-12 minutes, turning occasionally, until cooked through and lightly charred.
- 4Warm pita bread on the grill or in a pan. Serve chicken souvlaki skewers with warm pita, a generous dollop of tzatziki, sliced red onion, and fresh parsley.
