Ingredients

  • 2 tablespoons olive oil
  • 2 cups carrot
  • 1 cup celery
  • 1 cup onion
  • 2 cloves garlic
  • 1 pound chicken breast
  • 2 cups whole-wheat noodles
  • 8 cups chicken broth
  • 2 leaves bay leaves
  • 1 teaspoon thyme
  • 1 tablespoon lemon juice
  • 2 cups spinach
  • 1 teaspoon salt
  • 1 teaspoon peppers

Instructions

  1. 1Heat olive oil in a large pot over medium heat.
  2. 2Add chopped carrots, celery, and onion to the pot. Cook, stirring occasionally, until vegetables are softened, about 5 minutes.
  3. 3Stir in minced garlic and cook for another minute until fragrant.
  4. 4Add the chicken breast to the pot, along with the low-sodium chicken broth, bay leaves, and thyme.
  5. 5Bring to a boil, then reduce heat to a simmer. Cover and cook until the chicken is cooked through, about 20 minutes.
  6. 6Remove chicken breast from the pot and shred using two forks.
  7. 7Return shredded chicken to the pot and add whole-wheat noodles.
  8. 8Cook until noodles are tender, about 10 minutes.
  9. 9Stir in fresh lemon juice, chopped spinach, salt, and pepper.
  10. 10Cook until spinach is wilted, about 2 minutes.
  11. 11Adjust seasoning to taste, then remove bay leaves before serving.
  12. 12Serve hot, garnished with a sprinkle of fresh herbs if desired.
