Ingredients
- 2 tablespoons olive oil
- 2 cups carrot
- 1 cup celery
- 1 cup onion
- 2 cloves garlic
- 1 pound chicken breast
- 2 cups whole-wheat noodles
- 8 cups chicken broth
- 2 leaves bay leaves
- 1 teaspoon thyme
- 1 tablespoon lemon juice
- 2 cups spinach
- 1 teaspoon salt
- 1 teaspoon peppers
Instructions
- 1Heat olive oil in a large pot over medium heat.
- 2Add chopped carrots, celery, and onion to the pot. Cook, stirring occasionally, until vegetables are softened, about 5 minutes.
- 3Stir in minced garlic and cook for another minute until fragrant.
- 4Add the chicken breast to the pot, along with the low-sodium chicken broth, bay leaves, and thyme.
- 5Bring to a boil, then reduce heat to a simmer. Cover and cook until the chicken is cooked through, about 20 minutes.
- 6Remove chicken breast from the pot and shred using two forks.
- 7Return shredded chicken to the pot and add whole-wheat noodles.
- 8Cook until noodles are tender, about 10 minutes.
- 9Stir in fresh lemon juice, chopped spinach, salt, and pepper.
- 10Cook until spinach is wilted, about 2 minutes.
- 11Adjust seasoning to taste, then remove bay leaves before serving.
- 12Serve hot, garnished with a sprinkle of fresh herbs if desired.
