Ingredients

  • 2 cans canned white cannellini beans
  • 0.5 small red onion
  • 2 cloves garlic
  • 0.25 cup parsley
  • 2 tbsp fresh mint
  • 1 tsp dill
  • 1 tsp oregano
  • 1 tbsp lemon juice
  • 0.25 cup dry bread crumbs
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup plain greek yogurt
  • 0.5 unit english cucumber
  • 1 clove garlic
  • 2 tbsp dill
  • 1 tsp lemon juice
  • 1 tbsp olive oil
  • 0.25 tsp kosher salt
  • 0.125 tsp black pepper

Instructions

  1. 1For the tzatziki, combine Plain Greek Yogurt, grated English Cucumber, minced garlic (for tzatziki), Fresh Dill (for tzatziki), Lemon Juice (for tzatziki), Extra Virgin Olive Oil (for tzatziki), Kosher Salt (for tzatziki), and Black Pepper (for tzatziki) in a bowl. Mix well and chill.
  2. 2For the patties, mash the drained Canned White Cannellini Beans in a large bowl. Stir in minced Red Onion, minced garlic (for patties), Fresh Parsley, Fresh Mint, Dried Dill (for patties), Dried Oregano, Lemon Juice (for patties), Dry Bread Crumbs, Kosher Salt (for patties), and Black Pepper (for patties) until well combined.
  3. 3Form the mixture into 8-10 patties.
  4. 4Heat Olive Oil (for frying) in a large skillet over medium heat. Pan-fry the patties for 4-5 minutes per side, or until golden brown and heated through.
  5. 5Serve the warm Mediterranean White Bean and Herb Patties with the chilled Tzatziki.
