Ingredients

  • 1 medium cucumber
  • 2 medium tomatoes
  • 0.5 bell pepper
  • 0.25 cup onion
  • 1 clove garlic
  • 0.25 cup parsley
  • 1 tablespoon mint
  • 2 tablespoons olive oil
  • 1 tablespoon wine vinegar
  • to taste sea salt
  • to taste peppers
  • 0.5 teaspoon oregano

Instructions

  1. 1In a large bowl, combine the diced cucumber, tomato, bell pepper, sliced red onion, minced garlic, chopped parsley, and chopped mint.
  2. 2In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, sea salt, black pepper, and dried oregano.
  3. 3Pour the dressing over the cucumber and tomato mixture and toss gently to combine.
  4. 4Allow the salad to sit for at least 15 minutes to allow the flavors to meld. Taste and adjust seasonings as needed.
  5. 5Serve chilled or at room temperature.
