Ingredients

  • 30 leaves grape leaves
  • 1 cup brown rice
  • 1 medium onion
  • 2 cloves garlic
  • 1 cup dill
  • 1 cup mint
  • 0.25 cup pine nuts
  • 2 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions

  1. 1Rinse the grape leaves in warm water and set aside to drain.
  2. 2Cook brown rice according to package instructions until just tender, then let it cool.
  3. 3In a skillet, sauté the finely chopped onion and minced garlic in 1 tablespoon of olive oil until translucent.
  4. 4Combine the cooked rice, sautéed onion and garlic, finely chopped dill, mint, pine nuts, lemon juice, and the remaining olive oil in a bowl. Season with salt and pepper to taste.
  5. 5Lay a grape leaf flat on a work surface, shiny side down. Place a spoonful of the rice mixture near the stem end and fold in the sides of the leaf over the filling, then roll up tightly.
  6. 6Place the rolled dolmades seam side down in a large skillet.
  7. 7Pour enough water to just cover the dolmades, then bring to a simmer over low heat. Cover and cook for about 40 minutes, or until tender.
  8. 8Remove from heat and let cool in the pan for a few minutes. Serve warm or at room temperature, drizzled with extra lemon juice and a sprinkle of fresh herbs.
