Ingredients
- 1.5 pounds skinless, boneless chicken thighs
- 2 tablespoons olive oil
- 3 cloves garlic
- 1 cup cherry tomatoes
- 0.5 cup kalamata olives
- 2 tablespoons capers
- 3 tablespoons lemon juice
- 1 medium red onion
- 2 teaspoons oregano
- 1 teaspoon rosemary
- 1 teaspoon sea salt
- 0.5 teaspoon black pepper
Instructions
- 1Preheat your Dutch oven over medium heat and add the olive oil.
- 2Season the chicken thighs with salt and pepper, then add them to the Dutch oven. Cook until golden brown on each side, approximately 6 minutes per side.
- 3Remove the chicken and set aside. In the same Dutch oven, add the minced garlic and sliced red onion. Sauté until soft and fragrant.
- 4Add the cherry tomatoes, Kalamata olives, and capers to the Dutch oven. Cook until the tomatoes start to burst.
- 5Return the chicken to the Dutch oven. Add the lemon juice, fresh oregano, and rosemary. Stir gently to combine.
- 6Cover the Dutch oven and let the dish simmer for 20-25 minutes, or until the chicken is fully cooked.
- 7Adjust the seasoning with more sea salt and black pepper if needed.
- 8Serve hot, garnished with additional fresh herbs for extra flavor and a vibrant presentation.
