Ingredients

  • 1.5 pounds skinless, boneless chicken thighs
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 1 cup cherry tomatoes
  • 0.5 cup kalamata olives
  • 2 tablespoons capers
  • 3 tablespoons lemon juice
  • 1 medium red onion
  • 2 teaspoons oregano
  • 1 teaspoon rosemary
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper

Instructions

  1. 1Preheat your Dutch oven over medium heat and add the olive oil.
  2. 2Season the chicken thighs with salt and pepper, then add them to the Dutch oven. Cook until golden brown on each side, approximately 6 minutes per side.
  3. 3Remove the chicken and set aside. In the same Dutch oven, add the minced garlic and sliced red onion. Sauté until soft and fragrant.
  4. 4Add the cherry tomatoes, Kalamata olives, and capers to the Dutch oven. Cook until the tomatoes start to burst.
  5. 5Return the chicken to the Dutch oven. Add the lemon juice, fresh oregano, and rosemary. Stir gently to combine.
  6. 6Cover the Dutch oven and let the dish simmer for 20-25 minutes, or until the chicken is fully cooked.
  7. 7Adjust the seasoning with more sea salt and black pepper if needed.
  8. 8Serve hot, garnished with additional fresh herbs for extra flavor and a vibrant presentation.
