Ingredients

  • 3 tablespoons olive oil
  • 1 pound green beans
  • 2 large potatoes
  • 4 medium tomatoes
  • 1 large onion
  • 3 pieces garlic
  • 1 cup parsley
  • 1 teaspoon oregano
  • 1 teaspoon black pepper
  • 1 teaspoon sea salt

Instructions

  1. 1Prepare the vegetables: Trim the ends of the green beans, peel and chop the potatoes into 1-inch cubes, dice the tomatoes, finely chop the onions, and mince the garlic.
  2. 2In a large pot, heat the olive oil over medium heat. Add the onions and garlic, sautéing until translucent, about 5 minutes.
  3. 3Add the green beans, potatoes, tomatoes, parsley, dried oregano, black pepper, and salt to the pot. Stir to combine.
  4. 4Pour in enough water to barely cover the vegetables. Bring the mixture to a boil.
  5. 5Reduce the heat to low, cover, and simmer for about 45 minutes, or until the vegetables are tender.
  6. 6Check the stew occasionally, stirring gently, to prevent sticking. Add a little more water if necessary.
  7. 7Once the vegetables are tender and the sauce has thickened, adjust the seasoning with additional salt and pepper to taste.
  8. 8Serve the Fasolakia Lathera hot, accompanied by slices of crusty bread to soak up the delicious sauce.
  9. 9For a touch of freshness, garnish with additional parsley before serving.
  10. 10Enjoy the rich flavors and health benefits of this traditional Mediterranean dish.
  11. 11Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
