Ingredients

  • 1 cup dry fava beans
  • 4 cups water
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 0.5 cup red onion
  • 2 tablespoons capers
  • 1 clove garlic
  • 2 tablespoons parsley
  • 1 teaspoon sea salt
  • 0.25 teaspoon black pepper

Instructions

  1. 1Rinse the fava beans under cold water and remove any stones or debris.
  2. 2In a large pot, combine fava beans with 4 cups of water and bring to a boil. Reduce heat, cover, and simmer for 45-60 minutes or until beans are very tender.
  3. 3Drain the beans, reserving some cooking liquid for adjusting the dip's consistency.
  4. 4In a blender or food processor, combine the cooked fava beans, extra virgin olive oil, lemon juice, sea salt, and black pepper. Blend until smooth, adding reserved cooking liquid as needed to achieve a creamy consistency.
  5. 5Finely chop the red onion and mince the garlic.
  6. 6In a small skillet, heat a tablespoon of olive oil over medium heat. Add the onion and garlic, sautéing until soft and translucent, about 5 minutes.
  7. 7Fold the sautéed onion and garlic into the fava bean mixture.
  8. 8Chop the fresh parsley and reserve some for garnishing.
  9. 9Stir in the capers and most of the parsley into the dip.
  10. 10Taste and adjust seasonings, adding more salt, pepper, or lemon juice as needed.
  11. 11Transfer the dip to a serving bowl and drizzle with a little extra virgin olive oil.
  12. 12Garnish with the reserved parsley. Serve with warm whole-grain pita or vegetable sticks.
