Ingredients

  • 1 loaf wheat bread
  • 4 ounces feta cheese
  • 1 cup mixed olives
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 cup cherry tomatoes
  • 0.5 cup cucumber
  • 0.25 cup red onion
  • 0.25 cup basil
  • 1 tablespoon lemon juice
  • 1 teaspoon oregano
  • 0.5 teaspoon black pepper

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2Slice the whole grain baguette diagonally into 1/2 inch thick slices.
  3. 3Brush each bread slice lightly with olive oil on one side. Place on a baking sheet.
  4. 4Bake in the preheated oven until golden and crispy, about 10 minutes.
  5. 5While the bread is toasting, dice the cherry tomatoes, cucumber, and red onion. Mince the garlic.
  6. 6In a bowl, combine crumbled feta cheese, chopped mixed olives, diced tomatoes, cucumber, red onion, minced garlic, chopped fresh basil, lemon juice, dried oregano, and freshly ground black pepper.
  7. 7Once the bread is toasted, remove from oven and let cool slightly.
  8. 8Top each crostini with a generous spoonful of the feta and olive mixture.
  9. 9Drizzle with a little extra olive oil and garnish with a few fresh basil leaves before serving.
