Ingredients

  • 1 sheet wheat puff pastry
  • 100 g feta cheese
  • 50 g kalamata olives
  • 30 g spinach
  • 1 eggs
  • 1 tsp olive oil
  • 1 clove garlic
  • 2 tbsp dill
  • 1 lemon lemon
  • 1 tsp black pepper

Instructions

  1. 1Preheat oven to 200°C (392°F). Line a baking tray with parchment paper.
  2. 2In a skillet over medium heat, add olive oil and sauté garlic until fragrant, about 1 minute.
  3. 3Add spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.
  4. 4In a mixing bowl, combine sautéed spinach, chopped olives, crumbled feta cheese, lemon zest, fresh dill, and black pepper.
  5. 5Roll out the whole wheat puff pastry and cut into squares (about 5cm x 5cm).
  6. 6Place a spoonful of the feta and olive mixture in the center of each pastry square.
  7. 7Brush the edges of pastry squares with beaten egg, fold over to form a triangle, and press edges to seal.
  8. 8Place the pastry bites on the prepared baking tray. Brush the tops with the remaining beaten egg.
  9. 9Bake in the preheated oven until golden brown, about 15 minutes.
  10. 10Remove from oven and let cool slightly on a wire rack before serving.
  11. 11Serve warm or at room temperature for best flavor.
