Ingredients

  • 1.5 cups wheat pastry flour
  • 0.25 cup water
  • 3 tablespoons olive oil
  • 1 cup feta cheese
  • 0.5 cup kalamata olives
  • 1 cup spinach
  • 1 large eggs
  • 1 teaspoon lemon zest
  • 2 tablespoons dill
  • 0.5 teaspoon black pepper

Instructions

  1. 1Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. 2In a large bowl, mix whole wheat pastry flour with a pinch of salt. Gradically add cold water and 2 tablespoons of olive oil until the dough forms.
  3. 3On a floured surface, roll the dough into a rectangle about 1/8 inch thick.
  4. 4In a separate bowl, combine crumbled feta cheese, chopped kalamata olives, chopped fresh spinach, lemon zest, chopped fresh dill, and black pepper.
  5. 5Spread the feta and olive mixture evenly over the rolled-out dough, leaving a small margin at the edges.
  6. 6Starting at one long side, roll the dough tightly into a log. Cut into 1-inch thick slices.
  7. 7Place slices on the prepared baking sheet, brush with beaten egg, and drizzle with remaining olive oil.
  8. 8Bake for 25 minutes or until the swirls are golden and puffed up.
  9. 9Let cool for 5 minutes before serving.
