Ingredients

  • 3 cups grain flour
  • 1 cup water
  • 2.25 teaspoons active dry yeast
  • 1 teaspoon sugar
  • 0.25 cup olive oil
  • 3 tablespoons rosemary
  • 1 tablespoon salt
  • 2 tablespoons flaxseed
  • 5 tablespoons water

Instructions

  1. 1Mix warm water, sugar, and yeast in a bowl. Let sit for 5 minutes until foamy.
  2. 2Combine flaxseed meal and 5 tablespoons of water in a small bowl, set aside for 5 minutes to thicken.
  3. 3In a large bowl, mix the whole grain flour and salt. Create a well in the center.
  4. 4Add the yeast mixture, flaxseed mixture, and olive oil to the well. Mix to form a sticky dough.
  5. 5Turn the dough onto a floured surface and knead for about 10 minutes until smooth.
  6. 6Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for 1 hour or until doubled in size.
  7. 7Preheat the oven to 400°F (200°C).
  8. 8Punch down the dough and transfer to a greased baking sheet. Stretch the dough into a rectangle.
  9. 9Dimple the dough with your fingers, then drizzle with a little olive oil, sprinkle with rosemary and coarse sea salt.
  10. 10Let the dough rest for 20 minutes.
  11. 11Bake for 20 minutes, or until golden brown.
  12. 12Remove from oven and let cool on a wire rack.
