Fragrant Ginger Garbanzo Slow Simmer

Ingredients
- 2 tbsp extra virgin olive oil
- 1 large yellow onion
- 4 Cloves garlic
- 1 tbsp fresh ginger
- 2 medium carrot
- 2 celery ribs
- 2 tbsp tomato paste
- 2 cans canned garbanzo beans
- 1 can tomato puree
- 4 cups herb broth
- 1 tsp ground cumin
- 1 tsp ground coriander seeds
- 1 tsp sweet paprika
- 0.5 tsp turmeric
- 1 whole cinnamon stick
- 2 bay leaves
- 5 oz baby spinach leaves
- 2 tbsp lemon juice
- 0.25 cup parsley
- pinch salt
- pinch black pepper
Instructions
- 1Heat olive oil in a large pot over medium heat. Sauté onion, garlic, ginger, carrots, and celery until softened, about 8-10 minutes.
- 2Stir in tomato paste, ground cumin, ground coriander seeds, sweet paprika, and turmeric. Cook for 1 minute until fragrant.
- 3Add rinsed garbanzo beans, tomato puree, herb broth, cinnamon stick, and bay leaves. Bring to a simmer, then reduce heat, cover, and cook for 20-25 minutes, allowing flavors to meld.
- 4Stir in baby spinach leaves until wilted. Remove cinnamon stick and bay leaves.
- 5Finish with fresh lemon juice and fresh parsley. Season with salt and pepper to taste.
