Ingredients

  • 4 halves boneless skinless chicken breast
  • 2 tbsp extra virgin olive oil
  • 1 tbsp thyme
  • 1 tbsp oregano
  • 1 tsp salt
  • 0.5 tsp coarsely ground pepper
  • 1 cup long-grain rice
  • 2 cups water
  • 1 small shallot
  • 1 tsp garlic-infused oil
  • 4 cups broccoli florets
  • 1 medium carrot
  • 2 tbsp parsley
  • 1 tbsp fresh chives
  • 0.5 bell pepper green bell pepper

Instructions

  1. 1Preheat oven to 400°F (200°C). In a bowl, toss chicken breasts with 1 tbsp extra virgin olive oil, thyme, oregano, salt, and pepper. Place on a baking sheet and roast for 20-25 minutes, or until internal temperature reaches 165°F (74°C).
  2. 2While chicken roasts, combine long-grain rice, water, minced shallot, and garlic-infused oil in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15-18 minutes until water is absorbed and rice is tender.
  3. 3Steam broccoli florets, diced carrot, and diced green bell pepper with the remaining 1 tbsp extra virgin olive oil until tender-crisp, about 5-7 minutes.
  4. 4Serve the roasted chicken breast immediately with the cooked rice and steamed vegetables. Garnish with fresh parsley and chives.
