Ingredients

  • 1 slice wheat bread
  • 0.5 unit avocado
  • 1 unit eggs
  • 1 tablespoon olive oil
  • 1 clove garlic
  • 1 teaspoon red pepper flakes
  • 1 teaspoon sesame seeds
  • 1 teaspoon pumpkin seeds
  • 1 tablespoon parsley
  • 1 teaspoon lemon zest
  • 1 pinch sea salt
  • 1 pinch black pepper

Instructions

  1. 1Toast the whole grain bread to desired crispness.
  2. 2Mash the avocado with a fork and spread evenly over the toasted bread.
  3. 3Heat a non-stick pan over medium heat, add a few drops of olive oil, and crack the egg into the pan. Fry the egg to your liking.
  4. 4Place the fried egg on top of the mashed avocado.
  5. 5In a small pan, heat the remaining olive oil over low heat. Add minced garlic, chili flakes, sesame seeds, and pumpkin seeds. Cook until the garlic is golden and the seeds are toasted.
  6. 6Remove the pan from the heat and stir in chopped parsley, lemon zest, sea salt, and black pepper.
