Ingredients

  • 8 oz fish
  • 4 cups, shredded bok choy
  • 0.5 cup, chopped white onion
  • 1 tablespoon unsalted butter
  • 0.25 cup shredded mozzarella
  • 0.5 teaspoon granulated garlic
  • 0.25 teaspoon salt
  • 0.125 teaspoon white pepper
  • 1 teaspoon parsley flakes
  • 0.5 teaspoon Thyme
  • 0.25 cup white wine
  • 2 tablespoons light olive oil

Instructions

  1. 1Lightly sauté the shredded bok choy in light olive oil over medium heat until slightly softened but still crisp-tender. Season with a pinch of salt and white pepper. Set aside and keep warm.
  2. 2In a large skillet, melt unsalted butter with a drizzle of light olive oil over medium heat. Add finely chopped white onion and sauté until translucent.
  3. 3Add granulated garlic and cook until fragrant, being careful not to burn it.
  4. 4Add the bite-sized fish pieces to the skillet with the garlic and onion. Sauté until cooked through and opaque, stirring occasionally.
  5. 5Pour in white wine to deglaze the pan, scraping up any browned bits from the bottom. Allow the wine to reduce slightly, creating a light sauce.
  6. 6Add the sautéed bok choy to the skillet with the fish. Toss gently to combine, ensuring the bok choy is coated in the garlic wine sauce.
  7. 7Stir in parsley flakes and Thyme.
  8. 8Serve immediately, garnished with a sprinkle of shredded mozzarella (optional).
