Ingredients

  • 1 lb grain pizza dough
  • 6 oz goat cheese
  • 2 cups mushroom
  • 0.25 cup red onion
  • 2 cloves garlic
  • 1 cup spinach
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp thyme
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Instructions

  1. 1Preheat your oven to 475°F (245°C). Place a pizza stone or baking sheet inside to heat.
  2. 2Roll out the whole grain pizza dough on a piece of parchment paper to your desired thickness.
  3. 3In a skillet over medium heat, heat 1 tablespoon of olive oil. Add sliced mushrooms, diced red onion, and minced garlic, sautéing until the mushrooms are golden and the onions are translucent.
  4. 4Spread goat cheese evenly over the rolled out dough, leaving a small border for the crust.
  5. 5Top the goat cheese with the sautéed mushroom mixture.
  6. 6Add fresh spinach leaves over the mushrooms.
  7. 7Drizzle the remaining olive oil and balsamic vinegar over the top, then sprinkle with fresh thyme, salt, and black pepper.
  8. 8Carefully transfer the pizza (with the parchment paper) onto the preheated pizza stone or baking sheet.
  9. 9Bake for 15-20 minutes, or until the crust is crispy and golden.
  10. 10Remove from the oven and let it cool for a few minutes before slicing.
