Ingredients

  • 2 cans canned garbanzo beans
  • 0.5 cup parsley
  • 0.25 cup cilantro
  • 2 tbsp fresh mint
  • 0.5 yellow onion
  • 3 cloves garlic
  • 1 tsp ground cumin
  • 1 tsp ground coriander seeds
  • 0.25 cup garbanzo bean flour
  • 3 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 0.5 cup tahini
  • 3 tbsp lemon juice
  • 3 tbsp water
  • 1 english cucumber
  • 1 cup cherry tomatoes
  • 4 cups romaine lettuce
  • 4 pieces wheat pita bread

Instructions

  1. 1Combine garbanzo beans, parsley, cilantro, mint, onion, garlic, cumin, coriander, garbanzo bean flour, 1 tbsp olive oil, salt, and pepper in a food processor. Pulse until coarsely ground but still chunky. Form into 12-16 patties.
  2. 2Arrange falafel patties on a baking sheet lined with parchment paper. Bake at 400°F (200°C) for 20-25 minutes, flipping halfway, until golden brown and crispy.
  3. 3Whisk together tahini, 2 tbsp lemon juice, water, and a pinch of salt until smooth and creamy. Adjust water for desired consistency.
  4. 4In a large bowl, combine cucumber, cherry tomatoes, romaine lettuce, 1 tbsp lemon juice, and remaining 1 tbsp olive oil. Toss gently and season with salt and pepper.
  5. 5Warm pita bread. Serve baked falafel with the fresh salad, a generous drizzle of tahini sauce, and warm pita bread.
