Ingredients

  • 2 cups soybeans
  • 1 large red bell peppers
  • 1 large yellow bell pepper
  • 2 medium zucchini
  • 1 pint cherry tomatoes
  • 1 medium red onion
  • 0.25 cup extra virgin olive oil
  • 4 cloves garlic
  • 1 tsp coarse salt
  • 0.5 tsp black pepper
  • 1 tsp oregano
  • 0.5 tsp dried thyme
  • 1 tbsp fresh rosemary
  • 0.25 cup parsley
  • 2 tbsp lemon juice
  • 2 tbsp pine nuts
  • 2 tbsp fresh mint

Instructions

  1. 1Preheat oven to 400°F (200°C). On a large baking sheet, combine chopped bell peppers, zucchini, cherry tomatoes, red onion, extra virgin olive oil, minced garlic, coarse salt, black pepper, dried oregano, dried thyme, and chopped fresh rosemary. Toss well to coat.
  2. 2Roast for 25-30 minutes, or until vegetables are tender and slightly caramelized, stirring halfway through.
  3. 3In a large bowl, combine the roasted vegetables with the shelled soybeans.
  4. 4Stir in fresh parsley, lemon juice, pine nuts, and fresh mint. Toss gently to combine.
  5. 5Serve warm as a main course.
