Ingredients
- 2 tbsp extra virgin olive oil
- 1 large yellow onion
- 4 cloves garlic
- 1 tbsp fresh ginger
- 1.5 tsp ground cumin
- 1.5 tsp coriander
- 1 tsp turmeric
- 1 tsp smoked paprika
- 0.5 tsp ground cinnamon
- 0.25 tsp saffron strands
- 2 tbsp tomato paste
- 1 tsp harissa
- 2 large carrot
- 2 medium zucchini
- 30 oz canned garbanzo beans
- 0.5 cup dried apricots
- 3 cups herb broth
- 1 tsp kosher salt
- 0.5 tsp black pepper
- 0.25 cup cilantro
Instructions
- 1Heat olive oil in a large pot or Dutch oven over medium heat. Sauté onion until softened, then add garlic and grated ginger, cooking for 1 minute.
- 2Stir in ground cumin, ground coriander, turmeric, smoked paprika, ground cinnamon, saffron, tomato paste, and harissa. Cook for 1-2 minutes until fragrant.
- 3Add carrots, zucchini, drained garbanzo beans, dried apricots, and herb broth. Bring to a gentle simmer.
- 4Cover and cook for 20-25 minutes, or until vegetables are tender. Season with kosher salt and black pepper to taste.
- 5Serve hot, garnished with fresh cilantro.
