Ingredients
- 14 oz extra firm tofu
- 1 large eggplant
- 2 medium zucchini
- 1 red bell peppers
- 1 yellow onion
- 1 cup cherry tomatoes
- 3 tbsp extra virgin olive oil
- 1 tbsp oregano
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp garlic powder
- 0.5 tsp coarse salt
- 0.25 tsp black pepper
- 1 tbsp lemon juice
- 0.25 cup parsley
Instructions
- 1Preheat oven to 400°F (200°C). In a large bowl, combine cubed tofu, eggplant, zucchini, red bell pepper, yellow onion, and cherry tomatoes.
- 2Drizzle vegetables and tofu with extra virgin olive oil, then sprinkle with oregano, ground cumin, paprika, garlic powder, coarse salt, and black pepper. Toss gently to ensure everything is evenly coated.
- 3Spread the seasoned tofu and vegetables in a single layer on a large baking sheet.
- 4Roast for 25-35 minutes, stirring halfway through, until vegetables are tender and slightly caramelized, and tofu is golden.
- 5Drizzle with lemon juice and garnish with fresh chopped parsley before serving.
