Ingredients

  • 1.5 lbs chicken breast
  • 2 tbsp garlic-infused oil
  • 3 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • 1 tsp oregano
  • 1 tsp dried basil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup coconut cream
  • 0.5 cup cucumber
  • 2 tbsp fresh chives
  • 1 tbsp fresh mint
  • 1 tsp lemon juice
  • 1 pinch salt
  • 1 tbsp extra virgin olive oil
  • 4 large lettuce leaves
  • 1 medium italian plum tomato
  • 2 tbsp parsley

Instructions

  1. 1Marinate chicken: In a bowl, combine chicken cubes with Garlic-Infused Oil, 3 tbsp lemon juice, red wine vinegar, oregano, basil, 1 tsp salt, and black pepper. Marinate for at least 30 minutes in the refrigerator.
  2. 2Prepare tzatziki: While chicken marinates, combine coconut cream, grated cucumber, chives, mint, 1 tsp lemon juice, and a pinch of salt in a separate bowl. Mix well and chill until ready to serve.
  3. 3Cook chicken: Thread marinated chicken onto skewers. Heat extra virgin olive oil in a large pan or on a grill over medium-high heat. Cook skewers for 4-6 minutes per side, or until chicken is golden brown and cooked through.
