Ingredients

  • 1 pound lamb
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 medium red onion
  • 1 small cucumber
  • 1 cup yogurt
  • 1 tablespoon lemon juice
  • 2 tablespoons dill
  • 4 pieces grain pita bread
  • 2 medium tomatoes
  • 1 cup lettuce
  • 0.5 cup feta cheese
  • 1 teaspoon paprika
  • 1 teaspoon cumin

Instructions

  1. 1In a bowl, mix the lean lamb with olive oil, minced garlic, paprika, and cumin. Cover and marinate for at least 2 hours in the refrigerator.
  2. 2Preheat a grill or skillet over medium heat. Cook the lamb until it is browned and cooked to your liking, approximately 3-4 minutes per side for medium-rare.
  3. 3While the lamb is cooking, prepare the tzatziki sauce by combining low-fat Greek yogurt, grated cucumber, lemon juice, chopped dill, and a pinch of salt. Mix well and refrigerate until serving.
  4. 4Slice the red onion and tomatoes. Wash and dry the lettuce leaves.
  5. 5Once the lamb is cooked, let it rest for a few minutes before slicing thinly.
  6. 6Warm the whole grain pita bread in the oven or on a skillet for a few seconds until just warm and pliable.
  7. 7To assemble the gyros, spread some tzatziki sauce on the base of each pita, add the sliced lamb, and top with red onion, tomatoes, lettuce, and crumbled feta cheese.
  8. 8Fold the pita around the fillings and serve immediately, accompanied by extra tzatziki sauce on the side for dipping.
  9. 9For an additional touch of flavor, you can add a few drops of olive oil and a sprinkle of fresh dill over the gyro before serving.
  10. 10Enjoy your nutritious and flavorful Greek Lamb Gyro with a side of mixed greens or a Greek salad for a complete Mediterranean meal.
  11. 11Remember to stay hydrated with plenty of water or a glass of unsweetened iced tea with lemon.
  12. 12For a gluten-free option, use gluten-free pita bread to ensure the dish meets dietary needs without compromising on taste.
