Ingredients
- 1 cup brown rice
- 2 cups vegetable broth
- 3 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1 tablespoon olive oil
- 2 cloves garlic
- 2 tablespoons dill
- 1 bunch green onions
- 0.5 cup peas
- 0.5 teaspoon sea salt
- 0.25 teaspoon black pepper
Instructions
- 1Rinse brown rice under cold water until water runs clear.
- 2In a large saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- 3Add the rinsed rice to the saucepan, stirring to coat the grains with oil.
- 4Pour in the vegetable broth, lemon juice, and lemon zest. Bring to a boil.
- 5Reduce heat to low, cover, and simmer for 25-30 minutes, or until the rice is tender and the liquid is absorbed.
- 6In the last 5 minutes of cooking, stir in the frozen peas.
- 7Remove from heat. Add chopped dill and sliced green onions, stirring to combine.
- 8Season with sea salt and black pepper to taste.
- 9Let the rice sit, covered, for 5 minutes to allow the flavors to meld.
- 10Fluff with a fork before serving, garnishing with additional dill or lemon zest if desired.
