  • 2 medium zucchini
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon oregano
  • 2 cloves garlic

  • 0.25 teaspoon black pepper
  • 1 cup cherry tomatoes
  • 0.5 cup kalamata olives
  • 1 medium cucumber

Instructions

  1. 1Thinly slice the pork loin, zucchini, and cucumber. Mince the garlic and chop the red onion.
  2. 2In a large skillet, heat the extra virgin olive oil over medium-high heat.
  3. 3Add the pork loin slices to the skillet, season with half the salt and pepper, and stir-fry until they are browned and cooked through, about 6-8 minutes. Remove pork from the skillet and set aside.
  4. 4In the same skillet, add the red onion and garlic, sautéing until they are soft and fragrant, about 2 minutes.
  5. 5Add the zucchini to the skillet, seasoning with the remaining salt and pepper, and stir-fry until tender but still crisp, about 4-5 minutes.
  6. 6Return the pork to the skillet with the zucchini, and add the cherry tomatoes and kalamata olives.
  7. 7In a small bowl, whisk together the lemon juice and chopped oregano. Pour this sauce over the stir-fry in the skillet.
