Ingredients

  • 1.5 pounds pork shoulder
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic
  • 1 tablespoon oregano
  • 1 teaspoon rosemary
  • 1 teaspoon thyme
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 1 large red onion
  • 2 medium bell pepper

Instructions

  1. 1Trim any excess fat from the pork shoulder and cut into 1-inch cubes.
  2. 2In a large mixing bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, rosemary, thyme, sea salt, and black pepper.
  3. 3Add pork cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
  4. 4If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
  5. 5Preheat the grill to medium-high heat.
  6. 6Cut the red onion and bell peppers into chunks that are about the size of the pork cubes.
  7. 7Thread the marinated pork, onion, and bell pepper pieces alternately onto the skewers.
  8. 8Grill the skewers for 12-15 minutes, turning occasionally, until the pork is cooked through and vegetables are slightly charred.
  9. 9Remove from grill and let rest for a few minutes.
  10. 10Serve the souvlaki skewers hot, garnished with a sprinkle of fresh herbs if desired.
