Ingredients

  • 400 g steaks
  • 2 tbsp olive oil
  • 1 cup cucumber
  • 1 cup cherry tomatoes
  • 0.25 cup kalamata olives
  • 0.5 cup red onion
  • 0.5 cup feta cheese
  • 2 tbsp lemon juice
  • 1 tbsp oregano
  • 1 clove garlic
  • 1 tsp sea salt
  • 1 tsp black pepper

Instructions

  1. 1Preheat grill to high. Lightly brush steak with 1 tablespoon olive oil and season with salt and pepper.
  2. 2Grill steak to desired doneness, about 4-5 minutes per side for medium-rare. Let it rest for 5 minutes.
  3. 3While steak is resting, prepare the salad. In a large bowl, combine sliced cucumbers, cherry tomatoes, Kalamata olives, and thinly sliced red onion.
  4. 4In a small bowl, whisk together lemon juice, the remaining olive oil, minced garlic, chopped oregano, salt, and pepper to create the dressing.
  5. 5Slice the rested steak thinly against the grain.
  6. 6Toss the salad with the dressing, then gently fold in the steak slices.
  7. 7Serve the salad topped with crumbled feta cheese.
  8. 8Garnish with additional fresh oregano leaves if desired.
