Ingredients

  • 12 oz chicken breast
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp dried basil
  • 1 tsp oregano
  • 0.25 cup extra virgin olive oil
  • 1 tbsp garlic-infused oil
  • 1 tbsp apple cider
  • 1 tsp honey
  • 0.5 tsp dry mustard
  • 2 tbsp water
  • 0.25 tsp salt
  • 0.125 tsp black pepper
  • 6 cup butter lettuce
  • 0.5 cup cucumber
  • 1 cup roma tomatoes
  • 2 tbsp pine nuts
  • 2 tbsp parsley

Instructions

  1. 1Season chicken breasts with 2 tbsp olive oil, 1 tsp salt, 1/2 tsp coarsely ground pepper, dried basil, and dried oregano. Grill over medium-high heat for 6-8 minutes per side, or until cooked through. Let rest, then slice.
  2. 2In a small bowl, whisk together extra virgin olive oil, Garlic-Infused Oil, apple cider, Honey, dry mustard, water, 1/4 tsp salt, and 1/8 tsp coarsely ground pepper until well combined.
  3. 3In a large bowl, combine torn Butter Lettuce, sliced cucumber, and halved Roma tomatoes.
  4. 4Add dressing to the salad and toss gently to coat. Top with sliced grilled chicken, toasted pine nuts, and fresh parsley. Serve immediately.
