Ingredients

  • 1 pound chicken breast
  • 4 pieces wheat pita bread
  • 1 cup chickpea
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 bunch parsley
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. 1Preheat the grill to medium-high heat.
  2. 2In a bowl, mix the chicken breast with 1 tablespoon of olive oil, paprika, cumin, salt, and pepper.
  3. 3Grill the chicken for 10 minutes on each side or until fully cooked and juicy. Let it rest for a few minutes then slice it thinly.
  4. 4To make the hummus, blend chickpeas, tahini, lemon juice, garlic, remaining olive oil, salt, and a bit of water to achieve a smooth consistency.
  5. 5Warm the pita bread on the grill for about 1 minute on each side or until slightly crispy.
  6. 6Spread a generous layer of hummus on each pita bread.
  7. 7Add the sliced grilled chicken on top of the hummus.
  8. 8Garnish with fresh parsley.
  9. 9Optionally, add a sprinkle of paprika or drizzle of olive oil before serving.
  10. 10Serve immediately while still warm.
