Ingredients

  • 1.5 lbs chicken breast
  • 0.25 cup lemon juice
  • 0.25 cup extra virgin olive oil
  • 1 tbsp garlic paste
  • 1 tbsp dried thyme
  • 1 tsp salt
  • 0.5 tsp coarsely ground pepper
  • 1.5 cups non-fat greek yogurt
  • 1 large cucumber
  • 2 tbsp Fresh Dill
  • 1 tbsp fresh mint
  • 1 tsp apple cider vinegar
  • 2 tbsp extra virgin olive oil
  • 1 large red bell pepper
  • 1 small onion

Instructions

  1. 1Combine chicken, 1/4 cup lemon juice, 1/4 cup olive oil, garlic paste, thyme, salt, and pepper in a bowl. Marinate for at least 30 minutes.
  2. 2Thread marinated chicken, red bell pepper, and red onion chunks onto skewers.
  3. 3Grill skewers over medium-high heat for 10-15 minutes, turning occasionally, until chicken is cooked through and lightly charred.
  4. 4For tzatziki, combine non-fat Greek yogurt, grated cucumber, chopped dill, chopped mint, apple cider vinegar, 2 tbsp extra virgin olive oil, a pinch of salt, and pepper. Mix well.
  5. 5Serve grilled chicken souvlaki skewers immediately with the homemade tzatziki sauce.
