Ingredients
- 8 ounces halloumi cheese
- 1 whole lemon
- 1 handful mint
- 2 tablespoons olive oil
- 1 teaspoon black pepper
- 0.5 teaspoon garlic powder
- 1 medium zucchini
- 1 medium red bell peppers
- 0.5 cup cherry tomatoes
Instructions
- 1Slice halloumi into 1/2 inch thick slices. Pat dry with paper towels.
- 2Preheat grill to medium-high heat.
- 3Slice zucchini and bell pepper into thick slices, suitable for grilling.
- 4In a bowl, lightly toss the sliced zucchini, bell pepper, and cherry tomatoes with 1 tablespoon of olive oil, garlic powder, and black pepper.
- 5Grill the vegetables until tender and slightly charred, about 3-4 minutes per side. Remove and set aside.
- 6Brush the halloumi slices with the remaining olive oil.
- 7Place halloumi on the grill, cooking each side for 2-3 minutes until golden brown with grill marks.
- 8Slice the lemon into wedges.
- 9Arrange the grilled halloumi and vegetables on a plate.
- 10Squeeze lemon juice over the halloumi and vegetables.
- 11Garnish with fresh mint leaves.
- 12Serve immediately with additional lemon wedges on the side.
