Ingredients

  • 1 lb shrimp
  • 1 large cucumber
  • 0.5 cup feta cheese
  • 0.25 cup fresh basil
  • 3 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 tsp garlic paste
  • 0.25 cup red onion
  • 0 to taste salt
  • 0 to taste black pepper
  • 1 tbsp white wine vinegar
  • 0.5 cup red bell peppers
  • 1 cup grape tomatoes
  • 2 cups romaine lettuce
  • 1 tsp honey
  • 0.5 tsp oregano
  • 1 tsp grill seasoning
  • 0.25 cup pimento stuffed olives

Instructions

  1. 1Marinate shrimp with 1 tbsp olive oil, 1 tbsp lemon juice, garlic paste, grill seasoning, salt, and pepper. Grill shrimp over medium-high heat for 2-3 minutes per side until pink and cooked through.
  2. 2In a large bowl, combine diced cucumber, feta cheese, basil, red onion, red bell pepper, grape tomatoes, and pimento stuffed olives.
  3. 3Whisk together remaining 2 tbsp olive oil, 1 tbsp lemon juice, white wine vinegar, honey, oregano, salt, and pepper to create the dressing. Pour over the salad ingredients and toss gently to combine.
  4. 4Arrange chopped romaine lettuce on serving plates. Top with the cucumber and feta salad, then place the grilled shrimp on top.
