Ingredients
- 1.5 pounds swordfish
- 2 pieces bell pepper
- 1 piece onion
- 4 tablespoons olive oil
- 2 tablespoons lemon juice
- 3 cloves garlic
- 1 teaspoon oregano
- 0.5 teaspoon black pepper
- 2 tablespoons parsley
- 1 piece cucumber
- 2 pieces tomatoes
- 100 grams feta cheese
Instructions
- 1Cut swordfish into 1-inch cubes and place in a large bowl.
- 2Chop bell peppers and onions into chunks suitable for skewers.
- 3Mix olive oil, lemon juice, minced garlic, oregano, and black pepper in a small bowl.
- 4Pour marinade over swordfish cubes, cover, and refrigerate for at least 2 hours.
- 5Preheat grill to medium-high heat.
- 6Thread swordfish, bell peppers, and onions alternately onto skewers.
- 7Grill skewers, turning occasionally, until fish is opaque and vegetables are tender, about 10-15 minutes.
- 8Chop cucumber and tomatoes, and crumble feta cheese for salad.
- 9Combine cucumber, tomatoes, and feta cheese in a bowl. Drizzle with olive oil and sprinkle with parsley.
- 10Serve grilled skewers with the fresh salad on the side.
- 11Optionally, garnish with lemon wedges and additional parsley before serving.
