  • 2 large Italian Plum Tomatoes
  • 0.5 cup black olives
  • 0.25 cup fresh basil
  • 2 tbsp parsley
  • 2 tbsp lemon juice
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp dried basil
  • 0.5 tsp dried rubbed sage
  • 1 tbsp fresh chives
  • 1 serving lemon wedges

Instructions

  1. 1Prepare the relish: In a medium bowl, combine diced Italian plum tomatoes, sliced black olives, fresh basil, parsley, lemon juice, extra virgin olive oil, and red wine vinegar. Season with a pinch of salt and pepper, then set aside.
  2. 2Season the swordfish: Pat swordfish fillets dry. Brush both sides with olive oil, then season generously with salt, black pepper, dried basil, and dried rubbed sage.
  3. 3Grill the swordfish: Preheat a grill or grill pan to medium-high heat. Grill swordfish for 4-6 minutes per side, or until opaque and flaky.
