Ingredients
- 4 ounces halloumi cheese
- 2 slices wheat bread
- 1 large tomatoes
- 2 tablespoons olive oil
- 1 handful basil
- 1 handful arugula
- 1 tablespoon balsamic vinegar
- 1 teaspoon black pepper
- 1 teaspoon sea salt
Instructions
- 1Slice the halloumi cheese into 1/4 inch thick pieces.
- 2Heat a non-stick skillet over medium heat and grill the halloumi slices until golden brown on both sides, about 2 minutes per side.
- 3Toast the whole grain bread slices to your preferred crispness.
- 4Slice the tomato into thin slices.
- 5Wash and dry the arugula and basil leaves.
- 6Assemble the toast by drizzling olive oil on each slice of bread, followed by a layer of arugula.
- 7Place the grilled halloumi slices on top of the arugula.
