Ingredients

  • 200 g halloumi cheese
  • 2 medium zucchini
  • 1 large red bell peppers
  • 1 large yellow bell pepper
  • 1 large red onion
  • 200 g cherry tomatoes
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 cloves garlic
  • 1 tsp oregano
  • 1 tsp thyme
  • 0.5 tsp black pepper

Instructions

  1. 1Cut the halloumi cheese into 16 equal pieces. Slice the zucchini, bell peppers, and red onion into pieces that will easily fit on skewers.
  2. 2In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, and black pepper.
  3. 3Add the cut vegetables and halloumi pieces to the bowl and gently toss to coat with the marinade.
  4. 4Let the cheese and vegetables marinate for at least 15 minutes to absorb the flavors.
  5. 5While the ingredients are marinating, soak wooden skewers in water for 15 minutes to prevent burning.
  6. 6Preheat the grill to a medium-high heat.
  7. 7Thread the marinated halloumi and vegetables alternately onto the skewers.
  8. 8Grill the skewers for 2-3 minutes on each side or until the vegetables are tender and the cheese has grill marks.
  9. 9Remove the skewers from the grill and let them rest for a few minutes.
  10. 10Serve the skewers hot, with a drizzle of olive oil and a sprinkle of fresh herbs if desired.
